Smitty brings family recipes from Louisiana, where his parents grew up and he attended college, to the Lewis-Clark Valley!

He starts with a rub made up of a combination of spices his family has been using for decades. Then the meat is slow cooked on an open flame, fueled by fruit woods. From there it only gets better.

The meat is then, doused in his family’s homemade sauce and served to perfection!

Smitty gets real joy from watching patrons enjoy his family’s BBQ.

That is why he started Smitty’s Southern Style Q in 2003, and why he continues to work hard six days a week yearround to bring joy to those who stop by his stand. 

His motto, “Simply the BEST!” is evident in the faces of diners.

Located at 2820 East Main Street in Lewiston, Idaho, we have limited at site seating in the open air, but if you call ahead we’ll have it ready for you to take home or on a picnic and we’re happy to deliver in the Valley.

Smitty’s Southern Style Q has earned a five-star reputation for great BBQ, and for good reason. Smitty’s traces its recipes and cooking techniques to their Louisiana family traditions. If you have ever been to the Deep South, you’ll know that folks take a great deal of pride in their Q and no two families make it quite the same.

Smitty’s starts with a rub and that’s important because priming the meat or poultry with a special rub sets the flavor apart from just dousing sauce on it. Rubs penetrate deep and provide flavor through and through. Southern families pass down their rubs from generation to generation and each blend of spices is incredibly unique. Some rubs use ginger as a base, others may favor garlic and some go straight out pepper and salt. But the one thing they all have in common is a personal family touch.

Once the rub is properly introduced, the meat gets slow cooked over an open flame of fruit woods. The slow cooking BBQ method leaves the meat the juiciest of all the Q processes because it uses indirect heat. Wood from fruit trees tends to be among the best for cooking all types of meats and they add to the flavor. Apple, pear, cherry, maple and alder impart a mild, sweet taste that excites the palate. Soon Smitty’s homemade sauce is introduced and that particular recipe is their family secret.

Smitty’s Southern Style Q appears to draw some of its roots from the Memphis preparation style of using a pre-sauce rub, but it also includes the renowned Kansas City way of slow cooking meats to perfection. Louisiana has always been a melting pot of culinary styles and Smitty’s signature sweet-but-tangy, lip-smacking ribs, chicken, pulled pork and brisket brings together a best-of-the-best approach to a succulent Southern Style Q!
